  • 1 can (15 oz) of white beans, rinsed and drained
  • 1 can (14 oz) of artichoke hearts, drained and chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh basil, chopped
  • 1/4 cup of red onion, chopped
  • 1/4 cup of extra-virgin olive oil
  • 2 tbsp of freshly squeezed lemon juice
  • 1 clove of garlic, minced
  • Salt and pepper to taste


  1. In a large bowl, combine the white beans, artichoke hearts, parsley, basil, and red onion.

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve at room temperature or chilled.
