Ingredients

  • 2 cans of artichoke hearts, drained and quartered
  • 1 lemon, juiced
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the artichoke hearts, lemon juice, olive oil, parsley, salt, and pepper.

  2. Toss gently to coat the artichokes evenly with the dressing.

  3. Let the salad marinate in the refrigerator for at least 10 minutes.

  4. Serve chilled and garnish with additional parsley, if desired.
