How To Make Quick Artichoke Pasta Salad

Ingredients
- 8 oz rotini pasta
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions

Cook rotini pasta according to package instructions. Drain and set aside to cool.

In a large bowl, combine artichoke hearts, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and basil.

In a small bowl, whisk together olive oil, red wine vinegar, garlic, Dijon mustard, dried oregano, salt, and pepper to make the dressing.

Add cooked pasta to the vegetable mixture and toss with the dressing until well coated.

Serve chilled or at room temperature.
