How To Make Warm Artichoke & Asparagus Summer Salad

Ingredients

  • 1 bunch of asparagus
  • 2 cups of baby spinach
  • 1 can of artichoke hearts, drained and quartered
  • 1/2 cup of cherry tomatoes, halved
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp of lemon juice
  • Salt and pepper to taste
  • 1/4 cup of feta cheese, crumbled

Instructions

  1. In a pot of boiling water, blanch the asparagus for 2-3 minutes until slightly tender. Drain and rinse with cold water.

  2. In a large bowl, combine the asparagus, baby spinach, artichoke hearts, and cherry tomatoes.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  4. Drizzle the dressing over the salad and gently toss to combine.

  5. Sprinkle the feta cheese on top.

  6. Serve warm and enjoy!
