How To Make Peanut Chicken Stir-Fry Recipe

A flavorful stir-fry dish made with tender chicken and crunchy veggies, glazed with a rich peanut sauce.

Ingredients

  • 1 lb boneless chicken breast, sliced into thin strips
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup roasted peanuts
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch and 1/4 cup of water. Set aside.

  2. Heat 1 tbsp of vegetable oil in a wok or large skillet over high heat, add chicken strips and stir-fry for 5-6 minutes, until lightly browned and cooked through. Remove from the pan and set aside.

  3. Heat the remaining 1 tbsp of oil in the same pan, add onions and stir-fry for 2-3 minutes, until translucent.

  4. Add bell peppers and garlic and stir-fry for another 2-3 minutes, until slightly softened.

  5. Add the cooked chicken back into the pan, along with the peanut sauce and roasted peanuts. Stir to coat everything well and simmer for 2-3 minutes, until the sauce thickens.

  6. Season with salt and pepper, to taste.

  7. Serve hot over cooked rice.
