How To Make Peanut Chicken Stir-Fry Recipe
A flavorful stir-fry dish made with tender chicken and crunchy veggies, glazed with a rich peanut sauce.
Serves:
Ingredients
- 1 lb boneless chicken breast, sliced into thin strips
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1/2 cup roasted peanuts
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp cornstarch
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions

In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch and 1/4 cup of water. Set aside.

Heat 1 tbsp of vegetable oil in a wok or large skillet over high heat, add chicken strips and stir-fry for 5-6 minutes, until lightly browned and cooked through. Remove from the pan and set aside.

Heat the remaining 1 tbsp of oil in the same pan, add onions and stir-fry for 2-3 minutes, until translucent.

Add bell peppers and garlic and stir-fry for another 2-3 minutes, until slightly softened.

Add the cooked chicken back into the pan, along with the peanut sauce and roasted peanuts. Stir to coat everything well and simmer for 2-3 minutes, until the sauce thickens.

Season with salt and pepper, to taste.

Serve hot over cooked rice.
