Ingredients

  • 1 lb ground lamb
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup bread crumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tbsp tahini
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic
  • 1/4 tsp salt
  • 2 tbsp water
  • Pistachios, chopped for garnish
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground lamb, chopped pistachios, bread crumbs, parsley, red onion, minced garlic, cumin, coriander, salt, and black pepper. Mix well to combine.

  3. Shape the lamb mixture into small meatballs, about 1 inch in diameter.

  4. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Transfer the meatballs to a baking sheet and bake in the preheated oven for 10-12 minutes or until cooked through.

  5. In a food processor, combine the chickpeas, tahini, lemon juice, garlic, salt, and water. Process until smooth and creamy.

  6. To serve, spread the hummus onto a serving platter and top with the pistachio lamb meatballs. Garnish with chopped pistachios and fresh parsley.

  7. Enjoy as a delicious appetizer or snack!
