Ingredients

  • 4 lamb steaks
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 500g new potatoes
  • 4 tbsp hummus
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the grill or barbecue.

  2. Rub the lamb steaks with olive oil and season with salt and pepper.

  3. Grill the lamb steaks for about 4-5 minutes on each side for medium-rare, or adjust cooking time to desired doneness.

  4. While the lamb is cooking, boil the new potatoes until tender. Drain and set aside.

  5. Once the lamb is cooked to your liking, remove from heat and let it rest for a few minutes.

  6. In the meantime, lightly crush the new potatoes with a fork and season with salt and pepper.

  7. Serve the lamb steaks on a plate with a spoonful of hummus, a generous portion of new potatoes, and garnish with fresh parsley.
