Ingredients

  • 1 lb ground lamb
  • 1/2 cup bread crumbs
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef or vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, mix together the ground lamb, bread crumbs, onion, garlic, cumin, coriander, paprika, cayenne pepper, salt, and pepper. Shape the mixture into small meatballs.

  2. Heat the olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the pot and set aside.

  3. In the same pot, add the diced tomatoes and broth. Bring to a simmer and return the meatballs to the pot. Cover and cook for 30 minutes, stirring occasionally.

  4. Serve the spiced lamb meatball stew hot, garnished with fresh cilantro. Enjoy!
