How To Make Zucchini Roll Ups with Goat Cheese

Level up your dinner parties with a serving of these cheesy zucchini roll ups, packed with spicy sprouts and crisp bell peppers, for a tasty appetizer!

  • 2zucchini
  • 1cupfresh goat cheese
  • 1tbsplemon zest
  • ¼cupfresh herbs
  • salt
  • black pepper
  • cayenne pepper
  • 1red bell pepper
  • 4ozkaiware daikon sprouts,or any other spicy sprout


  1. Using a mandolin, slice zucchini lengthwise about ⅛-inch thick

  2. Lay out slices on a parchment-lined sheet pan. Lightly sprinkle salt onto zucchini slices and allow to rest for 30 minutes.

  3. In a mixing bowl, combine goat cheese, zest, and herbs. Mix until thoroughly combined; season to taste with salt, black pepper, and cayenne. Place the mixture into a piping bag.

  4. Mixture should be consistency of cream cheese; if it is too dry or crumbly, adjust by adding heavy cream or crème frâiche to mixture.

To Assemble:

  1. Pat the salted zucchini strips dry with paper towels. Pipe cheese about thickness of a ball point pen along one of short ends of zucchini strip.

  2. Place a few slices of red pepper and a pinch of sprouts next to cheese on strip, and roll up strip so cheese, pepper, and sprouts are in center of roll.

  3. With a sharp knife, slice zucchini roll in half and stand rolls up, allowing cut side to be on bottom.

  4. Serve and enjoy!
