Ingredients
- 4 Dorset sausages
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried sage
- Salt and pepper, to taste
- 1 sheet of ready-made puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 180°C (350°F).

In a frying pan, cook the sausages until browned on all sides. Remove from the pan and set aside to cool.

In the same pan, sauté the onion and garlic until softened and translucent.

Remove the casings from the cooled sausages and chop into small pieces. Add the sausage meat, dried thyme, dried sage, salt, and pepper to the pan with the onions and garlic. Cook for 5 minutes, stirring occasionally, until the sausage is cooked through.

Roll out the puff pastry sheet and cut into 4 equal squares.

Spoon the sausage mixture onto one half of each pastry square, leaving a border around the edges. Fold the other half of the pastry over the filling and press the edges together to seal. Crimp the edges with a fork.

Place the pasties on a baking sheet lined with parchment paper. Brush the tops with beaten egg.

Bake in the preheated oven for 25-30 minutes, or until the pastries are golden brown and crispy.

Serve hot or cold, as desired.
