How To Make Jersey Royal Salad with Horseradish Cream

Ingredients
- 500g Jersey Royal potatoes, halved
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tbsp horseradish
- 1 tsp Dijon mustard
- 1 tbsp chopped fresh dill
- Salt and pepper to taste
- 4 cups mixed salad greens
- 2 radishes, thinly sliced
- 1/4 cup chopped chives
Instructions

Place the Jersey Royal potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes until tender.

In a small bowl, mix together the mayonnaise, Greek yogurt, horseradish, Dijon mustard, dill, salt, and pepper to make the horseradish cream.

Drain the cooked potatoes and let them cool slightly.

In a large bowl, combine the potatoes, mixed salad greens, radishes, and chives.

Add the horseradish cream to the bowl and toss everything together until well coated.

Serve the Jersey Royal salad chilled and garnish with additional fresh dill, if desired.
