Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 large apples, peeled, cored, and thinly sliced
- 1 tbsp demerara sugar (for sprinkling)
Instructions

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, and ground cinnamon.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Spread half of the batter evenly into the prepared cake pan.

Arrange the apple slices over the batter, then spoon the remaining batter on top, spreading it carefully.

Sprinkle the demerara sugar over the top of the cake.

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
