Ingredients

  • 1 rabbit, cut into pieces
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 2 cups chicken broth
  • 1/2 cup red wine
  • 1 bay leaf
  • 1 tsp rosemary
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the rabbit pieces and cook until browned on all sides, approximately 5 minutes.

  3. Remove the rabbit from the pot and set aside.

  4. Add the onion and garlic to the pot and cook until softened, approximately 5 minutes.

  5. Add the carrots and potatoes to the pot and stir to combine.

  6. Add the chicken broth, red wine, bay leaf, rosemary, salt, and pepper to the pot.

  7. Stir the ingredients together and bring the mixture to a boil.

  8. Reduce the heat to low, cover the pot, and simmer for 1 1/2 to 2 hours, or until the rabbit is tender and fully cooked.

  9. Serve the rabbit stew hot with crusty bread.
