Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 garlic cloves, minced
  • 2 cups cooked white beans
  • 1 rabbit, cut into pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and carrots, and cook until softened, about 5 minutes.

  2. Add the garlic and white beans, and cook for an additional 2 minutes.

  3. Season the rabbit pieces with salt and pepper, then add them to the pot. Cook until the rabbit is browned on all sides, about 5 minutes.

  4. Add the chicken broth and rosemary to the pot, then bring to a simmer. Cover and cook for 1 hour and 30 minutes, or until the rabbit is tender.

  5. Serve hot, garnished with additional rosemary if desired.
