How To Make Millet Stuffed Bell Peppers

This dish is a healthy and vegan option that features millet, vegetables, and spices stuffed in nutritious bell peppers.

Ingredients

  • 4 bell peppers, any color
  • 1 cup cooked millet
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 tomato, chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. Cut off the tops of the bell peppers and remove the seeds and membranes.

  3. In a pan, sauté onion and garlic until translucent.

  4. Add zucchini, tomato, and spices. Cook until veggies are soft.

  5. Stir in millet and cook for a few more minutes.

  6. Stuff the mixture into the bell peppers and place them upright in a baking dish.

  7. Cover with foil and bake for 35 minutes.

  8. Remove foil and bake for an additional 5 minutes.

  9. Serve hot.
