How To Make Millet Stuffed Bell Peppers
This dish is a healthy and vegan option that features millet, vegetables, and spices stuffed in nutritious bell peppers.

Ingredients
- 4 bell peppers, any color
- 1 cup cooked millet
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 tomato, chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F.

Cut off the tops of the bell peppers and remove the seeds and membranes.

In a pan, sauté onion and garlic until translucent.

Add zucchini, tomato, and spices. Cook until veggies are soft.

Stir in millet and cook for a few more minutes.

Stuff the mixture into the bell peppers and place them upright in a baking dish.

Cover with foil and bake for 35 minutes.

Remove foil and bake for an additional 5 minutes.
