This gluten-free recipe brings out the nutty flavor of Millet in harmony with sweet raisins and earthy spices.

Ingredients

  • 1 cup millet, rinsed
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/4 tsp cinnamon powder
  • 1/4 cup raisins
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat oil in a pot and cook onions until soft and translucent.

  2. Add cumin, coriander, and cinnamon powder, and cook for another minute.

  3. Add the millet and stir to coat it with the spices.

  4. Add vegetable broth, raisins, salt, and pepper. Stir well.

  5. Bring to a boil, reduce heat to low, and cover with a tight lid. Cook for 20-25 minutes until the millet is cooked and the liquid is absorbed.

  6. Remove from heat and let it rest for 5 minutes.

  7. Fluff with a fork, garnish with chopped parsley, and serve hot.
