Ingredients

  • 1 cup cooked millet
  • 1 cup cooked lentils
  • 1 red bell pepper, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook millet and lentils according to package instructions.

  2. In a bowl, mix together millet, lentils, bell pepper, onion, parsley, and feta cheese.

  3. In a small bowl, whisk together olive oil and lemon juice. Pour over the salad and toss to combine.

  4. Season with salt and pepper to taste.
