How To Make Millet and Mushroom Risotto

A flavorful and hearty alternative to traditional risotto made with millet and savory mushrooms.

Serves:

Ingredients

  • 1 cup of millet
  • 4 cups of vegetable stock
  • 1 tbsp of olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 8 oz of mushrooms, sliced
  • 1/4 cup of white wine
  • 1/2 cup of grated parmesan
  • Salt and pepper to taste

Instructions

  1. In a pot, bring vegetable stock to a simmer and keep warm.

  2. In a separate pot, heat olive oil over medium heat and sauté onions and garlic for 3-4 minutes.

  3. Add sliced mushrooms and cook for an additional 5 minutes.

  4. Stir in millet and cook for 2 minutes, then pour in white wine and stir until evaporated.

  5. Add one cup of warm vegetable stock at a time, stirring often until each addition is mostly absorbed before adding more.

  6. Continue to cook and stir until millet is tender and creamy, about 25 minutes.

  7. Stir in grated parmesan and season with salt and pepper.

  8. Serve hot with extra parmesan on top.
