Ingredients

  • 1 cup cooked millet
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup diced mango
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted almonds
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the millet, strawberries, blueberries, mango, mint, and almonds.

  2. In a small bowl, whisk together the honey, lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the fruit mixture and toss gently until everything is coated.

  4. Serve immediately or refrigerate until ready to serve.
