How To Make Shawarma Marinade for Chicken

  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 cup lemon juice
  • 2 tbsp plain yogurt
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1.5 lbs boneless, skinless chicken thighs


  1. In a bowl, combine olive oil, garlic, cumin, paprika, coriander, turmeric, cinnamon, cayenne pepper, lemon juice, yogurt, honey, salt, and black pepper. Mix well.

  2. Place the chicken thighs in a ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken to coat evenly.

  3. Let the chicken marinate in the refrigerator for at least 2 hours, or overnight for best results.

  4. Preheat the grill to medium-high heat.

  5. Remove the chicken from the marinade, shaking off any excess. Discard the remaining marinade.

  6. Grill the chicken for about 8-10 minutes per side, or until cooked through and nicely charred.

  7. Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.

  8. Serve the shawarma chicken with pita bread, tzatziki sauce, and your favorite toppings.
