How To Make Toasted Coconut Rice

Ingredients
- 1 cup of white rice
- 1 ½ cups of coconut milk
- ½ cup of unsweetened shredded coconut
- 1 tablespoon of coconut oil
- 1 teaspoon of salt
Instructions

In a dry skillet, toast the shredded coconut over medium heat until golden brown. Set aside.

Rinse the white rice in cold water until the water runs clear.

In a pot, heat the coconut oil over medium heat. Add the rice and cook for about 2 minutes, stirring constantly.

Add the coconut milk and salt to the pot and bring to a boil. Lower the heat, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Remove the pot from the heat and let it sit, covered, for 5 minutes.

Fluff the rice with a fork and add the toasted shredded coconut. Mix gently until well combined.
