- 1 lb. shrimp, peeled and deveined
- 2 tbsp. olive oil
- 1 tbsp. fresh lemon juice
- 1 tbsp. fresh parsley, chopped
- 1 tbsp. fresh dill, chopped
- 1 garlic clove, minced
- Salt & Pepper to taste
Instructions
- Preheat grill or grill pan to medium-high heat.
- In a small bowl, whisk together olive oil, lemon juice, chopped parsley, chopped dill, minced garlic, salt, and pepper.
- Thread shrimp onto skewers and brush mixture over the shrimp skewers.
- Grill skewers for 3-4 minutes per side, until shrimp is pink and cooked through.
- Serve hot with lemon wedges.
