This flavorful shrimp dish is cooked in a tomato-based sauce, perfect for a low-carb and keto-friendly meal!

Serves:

Ingredients

  • 2 tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add shrimp and cook until pink and cooked through, about 3-4 minutes per side. Remove shrimp and set aside.

  3. Add onion and garlic to the same skillet and cook until softened, about 2-3 minutes.

  4. Add diced tomatoes and red pepper flakes to the skillet and stir to combine. Season with salt and pepper.

  5. Simmer for 5-7 minutes until the sauce has thickened slightly.

  6. Add cooked shrimp back to the skillet and toss to coat with the sauce.

  7. Garnish with fresh basil before serving.
