A delicious summer vegetable dish, perfect as a side or a main, that combines zucchini, tomatoes, and cheese in a creamy gratin.

Ingredients

  • 1 large zucchini, sliced
  • 1 large yellow squash, sliced
  • 2-3 large tomatoes, sliced
  • 2 cloves garlic, minced
  • 1/4 cup basil leaves, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a greased 9-inch baking dish, layer sliced zucchini, yellow squash, and tomatoes.

  3. In a small saucepan, heat minced garlic, chopped basil, heavy cream, grated parmesan cheese, salt, and black pepper until cheese is melted.

  4. Pour cream mixture over vegetables in baking dish.

  5. Bake for 45 minutes or until vegetables are tender and cream is bubbly and lightly browned on top.
