Ingredients

  • 4 large tortilla wraps
  • 1 red bell pepper, sliced
  • 1 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan to medium-high heat.

  2. In a mixing bowl, toss the sliced vegetables with olive oil, salt, and pepper.

  3. Grill the vegetables for about 5-7 minutes until tender and lightly charred.

  4. In another mixing bowl, combine the grilled vegetables, fresh herbs, and balsamic vinegar.

  5. Lay out the tortilla wraps and divide the vegetable mixture evenly among them.

  6. Roll up the wraps tightly, tucking in the ends, and slice in half.

  7. Serve immediately and enjoy!
