These sweet and savory meatballs with juicy pineapple chunks are drenched in a delicious teriyaki sauce.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup diced pineapple chunks
  • 1/4 cup chopped green onions
  • 1 egg
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup teriyaki sauce
  • 1 tbsp cornstarch
  • 1/4 cup water

Instructions

  1. Preheat oven to 400°F.

  2. In a mixing bowl, combine ground beef, breadcrumbs, pineapple, green onions, egg, garlic powder, salt, and black pepper. Mix well.

  3. Using a cookie scoop, form meatballs and place them on a baking sheet lined with parchment paper.

  4. Bake meatballs for 18-20 minutes.

  5. In a saucepan, combine teriyaki sauce and cornstarch. Whisk until the cornstarch is dissolved.

  6. Add water to the saucepan and continue to whisk until sauce thickens.

  7. When meatballs are done, place them in a serving dish and pour the teriyaki sauce over them.

  8. Garnish with additional green onions, if desired. Serve hot and enjoy!
