Ingredients

  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons vinegar
  • 1/4 cup pineapple juice
  • 1 tablespoon cornstarch
  • 1 bell pepper, cut into chunks
  • 1/2 cup pineapple chunks

Instructions

  1. In a large mixing bowl, combine ground beef, bread crumbs, milk, onion, and garlic. Mix until well combined.

  2. Shape the mixture into small meatballs, about 1 inch in diameter.

  3. In a large skillet, heat some oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove from the skillet and set aside.

  4. In the same skillet, combine soy sauce, ketchup, brown sugar, vinegar, pineapple juice, and cornstarch. Stir until the sauce thickens.

  5. Add the bell pepper and pineapple chunks to the skillet and cook for another 5 minutes.

  6. Return the meatballs to the skillet and stir until they are coated in the sauce. Cook for an additional 5 minutes, until the meatballs are heated through.

  7. Serve the sweet and sour meatballs over rice or noodles.
