  • 1 lb ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 can (20 oz) pineapple chunks, drained
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, milk, onion, garlic, ginger, curry powder, cumin, turmeric, salt, and pepper. Mix well and shape into meatballs.

  2. Heat oil in a large skillet over medium heat. Cook the meatballs until browned on all sides, about 8-10 minutes. Remove from skillet and set aside.

  3. In the same skillet, add pineapple chunks and cook for 2-3 minutes until slightly caramelized.

  4. Add coconut milk, chicken broth, soy sauce, brown sugar, and lime juice to the skillet. Stir well to combine.

  5. Return the meatballs to the skillet and simmer for 10-15 minutes until cooked through and the sauce has thickened.

  6. Serve the turkey meatballs and pineapple curry over cooked rice. Garnish with fresh cilantro.
