  • 1 cup Guinness beer
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • Irish soda bread or crackers, for serving


  1. In a small pot, bring the Guinness beer to a boil and simmer until reduced by half.

  2. In a mixing bowl, beat the cream cheese until smooth.

  3. Gradually add the reduced beer, shredded cheddar cheese, chopped green onions, garlic powder, salt, and pepper until well combined.

  4. Transfer the dip to a bowl and serve with Irish soda bread or crackers.
