  • 5 oz arugula
  • 4 oz smoked salmon, sliced
  • 1 avocado, peeled and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • Salt and black pepper, to taste


  1. In a large bowl, whisk together olive oil, lemon juice, and dill.

  2. Add arugula, smoked salmon, avocado, and onion to the bowl.

  3. Toss gently until all ingredients are coated in the dressing.

  4. Season with salt and black pepper, to taste.

  5. Serve immediately.
