Ingredients

  • 6 cups mixed greens
  • 1/4 red onion, sliced
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped pecans
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, red onion, strawberries, blueberries, feta cheese, and pecans.

  2. In a small saucepan, whisk together the balsamic vinegar, honey, Dijon mustard, salt, and pepper. Bring to a simmer over medium heat and cook for 5-7 minutes or until the glaze has thickened.

  3. Drizzle the balsamic glaze over the salad and toss to combine. Serve immediately.
