Ingredients

  • 4 medium beets, roasted and diced
  • 6 cups mixed salad greens
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Wrap beets in foil and bake for 35-40 min. Once tender, let cool and peel the skin, then dice the beets.

  2. In a large bowl, combine mixed greens, diced beets, crumbled goat cheese, chopped walnuts, and dried cranberries.

  3. In a small bowl, whisk together balsamic vinegar, olive oil, salt and pepper. Drizzle dressing over salad and toss well.
