- 4 medium beets, roasted and diced
- 6 cups mixed salad greens
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- salt and pepper to taste
Instructions

Preheat oven to 400°F. Wrap beets in foil and bake for 35-40 min. Once tender, let cool and peel the skin, then dice the beets.

In a large bowl, combine mixed greens, diced beets, crumbled goat cheese, chopped walnuts, and dried cranberries.
