  • 1 lb cooked shrimp, peeled and deveined
  • 1 ripe mango, peeled and diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 2 cups mixed salad greens
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste


  1. In a large bowl, combine shrimp, mango, red bell pepper, red onion, salad greens, and cilantro.

  2. In a small bowl, whisk together olive oil and lime juice. Season with salt and pepper to taste.

  3. Drizzle dressing over salad and toss gently to combine. Serve cold.
