  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1/2 cup sliced radishes
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup fresh orange juice
  • 2 tbsp minced ginger
  • 1 tbsp honey
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine salad greens, cherry tomatoes, red onion, and radishes.

  2. In a small bowl, whisk together orange juice, ginger, honey, olive oil, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Top the salad with crumbled feta cheese and chopped parsley.
