How To Make Easter Salad with Candied Pecans

Serves:

Ingredients

  • 4 cups mixed greens
  • 1/2 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pecans
  • 1/4 cup sugar
  • 2 tbsp butter
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.

  2. In a small saucepan, melt butter and add sugar. Cook until sugar dissolves.

  3. Add pecans and stir until fully coated. Spread pecans on a lined baking sheet and bake for 10 minutes.

  4. In a large bowl, combine mixed greens, strawberries, blueberries, avocado, red onion, and feta cheese.

  5. In a separate bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.

  6. Drizzle dressing over the salad and toss to combine.

  7. Top the salad with candied pecans before serving.
