How To Make Easter Salad with Quinoa and Avocado

A refreshing and healthy salad perfect for the Easter holiday.

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/4 tsp salt
  • 1 large avocado, diced
  • 1 cucumber, diced
  • 1/2 red onion, sliced
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa in a fine mesh strainer and put it in a medium-sized pot with water and salt.

  2. Heat until boiling, then reduce heat and let simmer for 15-20 minutes until the liquid has been absorbed. Fluff with a fork and let cool.

  3. In a large bowl, combine the cooled quinoa, avocado, cucumber, red onion, red bell pepper, parsley, and mint.

  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss gently to combine.

  5. Serve and enjoy!
