  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1/2 cup leftover Easter vegetables, chopped
  • 6 eggs
  • Salt and pepper, to taste
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. Heat olive oil in a 10-inch oven-safe skillet over medium heat.

  3. Add onion and bell pepper and sauté for 5 minutes.

  4. Add leftover Easter vegetables and cook for an additional 2 minutes.

  5. In a bowl, whisk eggs, salt, and pepper together.

  6. Pour the egg mixture into the skillet and cook on the stovetop for 3-4 minutes, until the edges start to set.

  7. Sprinkle shredded cheddar cheese on top of the frittata and transfer to the oven.

  8. Bake for 15 minutes, or until the frittata is fully set and lightly golden.
