How To Make Easter Leftover Vegetable Frittata Recipe

Ingredients
- 1 tbsp olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1/2 cup leftover Easter vegetables, chopped
- 6 eggs
- Salt and pepper, to taste
- 1/4 cup shredded cheddar cheese
Instructions

Preheat oven to 375°F.

Heat olive oil in a 10-inch oven-safe skillet over medium heat.

Add onion and bell pepper and sauté for 5 minutes.

Add leftover Easter vegetables and cook for an additional 2 minutes.

In a bowl, whisk eggs, salt, and pepper together.

Pour the egg mixture into the skillet and cook on the stovetop for 3-4 minutes, until the edges start to set.

Sprinkle shredded cheddar cheese on top of the frittata and transfer to the oven.
