- 1 (10-12 pound) goose
- 1 lemon, halved
- Salt and pepper, to taste
- 3 sprigs of fresh thyme
- 3 sprigs of fresh rosemary
- 4 cloves of garlic, crushed
- 2 onions, quartered
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 1 cup of chicken broth
- 2 tablespoons of flour
Instructions

Preheat the oven to 400°F (200°C). Place the goose on a rack in a roasting pan.

Squeeze the lemon halves over the goose and season generously with salt and pepper.

Stuff the cavity of the goose with the thyme, rosemary, garlic, onions, carrots, and celery.

Roast the goose in the preheated oven for 30 minutes.

Reduce the oven temperature to 350°F (180°C) and continue roasting for 2 hours, basting every 30 minutes with the pan juices.

In a small bowl, mix the flour with a few tablespoons of water to create a paste.

Remove the goose from the oven and transfer it to a carving board. Tent with foil and let rest for 20 minutes.

Meanwhile, pour the pan juices into a saucepan and skim off any excess fat. Place the saucepan over medium heat and whisk in the flour paste.

Cook the gravy until thickened, about 5-10 minutes.

Carve the goose and serve with the gravy.
