Ingredients

  • 2 cups cooked white rice
  • 1 can black beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 chipotle chili in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and garlic. Cook until softened, about 5 minutes.

  2. Stir in the minced chipotle chili, cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 2 minutes.

  3. Add the rinsed black beans to the skillet and stir well to combine. Cook for another 5 minutes, until the beans are heated through and well seasoned.

  4. In a separate small saucepan, heat the corn kernels until warmed.

  5. To assemble the burrito bowls, divide the cooked rice among 4 bowls. Top each with a generous scoop of the chipotle black beans, corn kernels, cherry tomatoes, and avocado slices.

  6. Garnish with fresh cilantro and serve with lime wedges for squeezing over the top.
