How To Make Burrito Bowl with Chipotle Black Beans

Ingredients
- 2 cups cooked white rice
- 1 can black beans, rinsed and drained
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 chipotle chili in adobo sauce, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions

In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and garlic. Cook until softened, about 5 minutes.

Stir in the minced chipotle chili, cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 2 minutes.

Add the rinsed black beans to the skillet and stir well to combine. Cook for another 5 minutes, until the beans are heated through and well seasoned.

In a separate small saucepan, heat the corn kernels until warmed.

To assemble the burrito bowls, divide the cooked rice among 4 bowls. Top each with a generous scoop of the chipotle black beans, corn kernels, cherry tomatoes, and avocado slices.
