Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 4 large eggs
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1 cup roast beef, sliced
  • 1 cup cooked vegetables (such as carrots and peas)
  • 1 cup gravy

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, whisk together the flour, milk, eggs, and salt until smooth.

  3. Heat the vegetable oil in a muffin tin or Yorkshire pudding tin in the oven for 5 minutes.

  4. Carefully pour the batter into the hot tin, filling each well halfway.

  5. Bake for 20 minutes or until puffed and golden brown.

  6. In a separate pan, heat the roast beef, cooked vegetables, and gravy until warmed through.

  7. Carefully remove the Yorkshire puddings from the tin and slice them in half horizontally.

  8. Fill each half with the roast beef mixture and serve immediately.
