How To Make Andouille Sausage and Tomato Pasta Recipe

A hearty and flavorful pasta dish with spicy Andouille sausage and sweet cherry tomatoes.

Ingredients

  • 12 oz penne pasta
  • 4 Andouille sausage links, sliced
  • 1 tbsp olive oil
  • 1 pint cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, chopped

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.

  2. In a large skillet over medium heat, add the olive oil and sliced sausage. Cook for 5-6 minutes until browned.

  3. Add the garlic, red pepper flakes, cherry tomatoes, salt, and pepper. Cook for another 5-6 minutes until the tomatoes have burst and created a sauce.

  4. Add the cooked pasta to the skillet and toss everything together. Sprinkle Parmesan cheese and chopped basil on top before serving.
