  • 4 large potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Peel the potatoes and cut them into small, evenly-sized cubes.

  3. Place the potato cubes in a large pot of salted water and bring to a boil. Cook for about 5 minutes, until partially cooked.

  4. Drain the potatoes and spread them out on a baking sheet.

  5. Drizzle the olive oil over the potatoes and season with salt and black pepper. Toss to coat evenly.

  6. Roast the potatoes in the preheated oven for 25-30 minutes, or until golden brown and crispy, stirring occasionally.

  7. Sprinkle with chopped parsley, if desired, before serving.
