How To Make Brunch Rosti Recipe

Ingredients
- 4 medium-sized potatoes
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 2 tablespoons of vegetable oil
- 4 slices of cooked bacon, crumbled
- 1/2 cup of shredded cheddar cheese
- 4 eggs
Instructions

Peel and grate the potatoes using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

In a mixing bowl, combine the grated potatoes, salt, black pepper, and paprika. Mix well.

Heat one tablespoon of vegetable oil in a large non-stick skillet over medium heat.

Divide the potato mixture into four equal portions and shape each portion into a flat round rosti.

Place the rosti in the heated skillet and cook for about 10-12 minutes on each side, until golden brown and crispy. Repeat with the remaining rosti.

While the rosti is cooking, fry the eggs in a separate pan according to your preference (sunny side up, over easy, etc.).

Once the rosti is cooked and crispy, transfer them to serving plates. Top each rosti with a slice of cooked bacon, a sprinkle of shredded cheddar cheese, and a fried egg.
