Ingredients

  • 4 medium-sized potatoes
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of paprika
  • 2 tablespoons of vegetable oil
  • 4 slices of cooked bacon, crumbled
  • 1/2 cup of shredded cheddar cheese
  • 4 eggs

Instructions

  1. Peel and grate the potatoes using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

  2. In a mixing bowl, combine the grated potatoes, salt, black pepper, and paprika. Mix well.

  3. Heat one tablespoon of vegetable oil in a large non-stick skillet over medium heat.

  4. Divide the potato mixture into four equal portions and shape each portion into a flat round rosti.

  5. Place the rosti in the heated skillet and cook for about 10-12 minutes on each side, until golden brown and crispy. Repeat with the remaining rosti.

  6. While the rosti is cooking, fry the eggs in a separate pan according to your preference (sunny side up, over easy, etc.).

  7. Once the rosti is cooked and crispy, transfer them to serving plates. Top each rosti with a slice of cooked bacon, a sprinkle of shredded cheddar cheese, and a fried egg.

  8. Serve the brunch rosti immediately and enjoy!
