How To Make Goat’s Cheese & Bacon Rosti

Ingredients
- 4 large potatoes, grated
- 4 slices bacon, cooked and crumbled
- 1 cup goat’s cheese, crumbled
- 2 green onions, chopped
- 2 tablespoons all-purpose flour
- 2 eggs, beaten
- salt and pepper, to taste
- vegetable oil, for frying
Instructions

Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated potatoes, bacon, goat’s cheese, green onions, flour, eggs, salt, and pepper. Mix well.

Heat a thin layer of vegetable oil in a large skillet over medium heat.

Take about 1/4 cup of the potato mixture and form it into a flat pancake shape. Place it in the hot skillet and flatten it slightly with a spatula.

Cook the rosti for about 3-4 minutes on each side, until golden brown and crispy. Remove from the skillet and drain on paper towels.

Repeat with the remaining potato mixture.

Serve the goat’s cheese and bacon rosti hot, topped with additional crumbled goat’s cheese and green onions, if desired.
