Ingredients
- 500g minced beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp cayenne pepper
- 1 can (400g) chopped tomatoes
- 200g couscous
- 300ml vegetable stock
- Fresh coriander leaves, for garnish
- Salt and pepper, to taste
Instructions

Heat some oil in a large frying pan and sauté the onion and garlic until softened.

Add the minced beef and cook until browned. Drain any excess fat.

Stir in the cumin, coriander, paprika, cinnamon, ginger, and cayenne pepper. Cook for another minute to release the flavors.

Add the chopped tomatoes and season with salt and pepper. Simmer for 15 minutes.

Meanwhile, prepare the couscous by pouring it into a bowl and covering it with the hot vegetable stock. Leave it to absorb for 10 minutes, then fluff it up with a fork.

Serve the spiced mince over the fluffy couscous and garnish with fresh coriander leaves.
