Ingredients

  • 1 large celeriac, peeled and cut into wedges
  • 200g mushrooms, sliced
  • 2 tbsp honey
  • 3 tbsp olive oil
  • 4 sprigs of fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. In a large mixing bowl, combine the celeriac, mushrooms, honey, olive oil, and thyme. Season with salt and pepper.

  3. Toss everything together until the vegetables are evenly coated.

  4. Transfer the mixture to a baking dish and spread it out in a single layer.

  5. Roast in the preheated oven for 40-45 minutes, or until the celeriac is tender and lightly caramelized.

  6. Remove from the oven and let it cool for a few minutes before serving.
