Ingredients

  • 1 large celeriac, peeled and cut into bite-sized chunks
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Place the celeriac chunks on a baking sheet.

  2. In a small bowl, mix together the olive oil, curry powder, cumin, coriander, turmeric, paprika, salt, and pepper. Drizzle the spice mixture over the celeriac and toss until well coated.

  3. Roast in the preheated oven for 30-40 minutes, or until the celeriac is golden brown and tender, stirring halfway through.

  4. Remove from the oven and garnish with fresh cilantro. Serve hot.
