A tangy and spicy salsa made with Anaheim peppers.

Ingredients
- 4 Anaheim peppers, roasted and diced
- 1 cup diced tomatoes
- 1/4 cup diced onion
- 1 clove garlic, minced
- 1 jalapeño pepper, diced
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- Salt to taste
Instructions

Roast Anaheim peppers over an open flame or in the oven until the skin is charred and bubbled.

Place the roasted peppers in a bowl and cover with plastic wrap for 10 minutes to steam. Then remove the skin, ribs, and seeds.

Dice the peppers and add to a mixing bowl along with diced tomatoes, diced onion, minced garlic, diced jalapeño pepper, chopped cilantro, lime juice, and salt to taste.

Mix everything together and serve with tortilla chips.
