Ingredients
- 2 cups of broccoli florets
- 2 large potatoes, boiled and mashed
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves of garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- Vegetable oil, for frying
Instructions

Steam the broccoli until tender. Drain and allow it to cool. Once cooled, chop the florets into small pieces.

In a mixing bowl, combine the mashed potatoes, chopped broccoli, bread crumbs, Parmesan cheese, minced garlic, dried oregano, salt, and black pepper. Mix well until all ingredients are evenly combined.

Shape the mixture into small croquettes, about the size of a golf ball.

Dip each croquette into the beaten eggs, then roll them in the breadcrumbs, pressing gently to coat them evenly.

Heat vegetable oil in a deep pan or skillet over medium heat. Fry the croquettes in batches for about 3-4 minutes on each side, or until golden brown and crispy.

Remove the croquettes from the pan and drain them on a paper towel-lined plate.

Serve the broccoli and potato croquettes hot as an appetizer or a side dish.
