How To Make Bubble & Squeak Croquettes

Ingredients
- 2 cups mashed potatoes
- 1 cup cooked cabbage, finely chopped
- 1 cup cooked carrots, finely chopped
- 1/2 cup cooked peas
- 1/4 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup bread crumbs
- Vegetable oil (for frying)
Instructions

In a large bowl, combine the mashed potatoes, cabbage, carrots, peas, cheddar cheese, parsley, salt, and black pepper. Mix well.

Shape the mixture into small croquettes.

Roll each croquette in flour, dip in beaten eggs, and then coat with bread crumbs.

Heat vegetable oil in a deep frying pan over medium heat.

Fry the croquettes in batches until golden brown and crispy on all sides. Drain on paper towels.
